Recipe for Czech Apple Strudel

Apple strudel is a popular delicacy in many Easter European countries. It is a sweet layered pastry with an apple, raisin and nut filling inside. The strudel can be served on its own or with ice cream, whipped cream or vanilla sauce. You need not be a top chef because apple strudel is easy to make.

All coffee houses in Prague serve apple strudel. If you want to savour this delicacy in style go to Café Savoy, a Viennese-style café full of bel époque atmosphere, or Kavarna Obecni Dum, if you want to munch your apple strudel in Art Nouveau surroundings.

Apple Strudel Recipe


* 150 g flour
* 60 ml hot water
* pinch of salt
* 1 teaspoon lemon juice
* 60 g butter
* flour for rolling
* 50 g raisins
* 50 g crushed walnuts
* 4-5 medium sized apples
* cinnamon sugar
* icing sugar


1.  sift the flour into a bowl
2.  put lemon juice, 2 tablespoons of melted butter into the water
3.  pour this mixture into a hollow made in the flour and work into a thick dough
4.  cover the bowl with a hot damp tea towel
5.  peel, core and slice the apples
6.  rinse and drain the raisins
7.  roll out the dough to a thin sheet and then stretch it by hand until it is almost transparent
8.  place it on a hot tea towel dusted with flour
9.  trim the edges and sprinkle with fat, nuts and raisins
10. place the apples on top
11. sprinkle with cinnamon sugar
12. roll up using the tea towel
13. transfer the roll to a greased baking sheet.
14. pinch the edges of the dough together to seal
15. place in an oven preheated to 210 degrees
16. bake for 25-30 minutes
17. cut the roll into diagonal slices while it is still warm
18. dust with icing sugar
